Recipes - A few of our favorite things! 

It's no surprise that fishermen eat a lot of fish, and as a result we've got the preparation down to a science!  The Coastal Troller's Association proudly supports local food sourcing, and we'd like to encourage you to buy local-caught and try a few of our favorite recipes below.

* A few tips and tricks

- One adult portion = approx. 1/2 lbs of tuna meat.

- Don't overcook! Tuna is best when the meat has just turned from pink to white.

- Discard any dark red meat before or after cooking (this is what can add a 'fishy taste' to your tuna)

- A tuna loin is the boneless meat from 1/4 of a tuna. 

Salmon with Parsley-Horseradish Crust

 

Courtesy of Whole Foods Market, this mustard and citrus based crust keeps the fish moist and flavorful.  Can be baked or try it on the grill! 

Baked Salmon with Lemon-thyme Flaky Salt​

 

A new spin on a tradition preparation.  Uses shallots as the main flavoring during baking, and a lemon-thyme salt sprinkle for final seasoning.  A light and healthy but very flavorful dish! Courtesy of Whole Foods Market.

Batter Recipe

 

Blend 1C flour, 1tsp. salt, & 2 tsp. baking power.  Then add 1 egg yolk, 3/4C warm water and 1 tsp. of oil.  Fold in 1 stiffly beaten egg white.  Use to coat fish prior to deep frying.
